This Bread Rasmalai Cake Recipe is free from :

Bread Rasmalai Cake Ingredients:

  • 6 slices Gluten-Free Bread of your choice
  • 4 cups Non-Dairy Oats Milk
  • ½ cup Sugar
  • 1 TBSP Corn Starch
  • 1 TBSP Melon Seeds
  • 1 Tsp Cardamom powder
  • Kesar/Saffron
  • Non-Dairy Whipping Cream (Optional)

Method:

  • To prepare Rabdi: Heat a pan on medium flame. 
  • Bring the Oats milk to a boil. 
  • Set aside 2-3 tablespoons of milk in a bowl, add kesar strands, and let it soak. 
  • Lower the flame and simmer the milk for 5 minutes. Stir frequently to prevent sticking. Add sugar, cardamom powder, and the soaked kesar. 
  • Create a corn slurry by mixing cornstarch and cold oat milk in a bowl, then add it to the Rabdi. Stir continuously to avoid lumps. 
  • Cook on low flame for another 5-7 minutes. Allow it to cool completely.

Assembling the Cake:

  • In a setting dish, layer the Rabdi.
  • Trim the edges of the bread slices. Place the first layer of bread.
  • Spread a layer of optional whipped cream and melon seeds over the bread.
  • Add the second layer of bread and gently press it down.
  • Pour a generous amount of Rabdi on top. Garnish with melon seeds and rose petals if desired.
  • Save some Rabdi to drizzle on top before serving.
  • Cover and refrigerate to set.
