  1. Rice – Basmati or long grain – 1 cup
  2. Carrots / Gajar – cut into small cubes – ½ cup
  3. Green peas – ½ cup
  4. Vegetable oil – 1 TBSP
  5. Black pepper cons – 1 Tsp
  6. Black cardamom – 1
  7. Star Anise – 1
  8. Cinnamon stick – ½ inch -1
  9. Bay leaf – 1
  10. Cumin seeds / Jeera – 1 Tsp
  11. Hing powder – ½ Tsp
  12. Green Chilies – slit in between – 2 -3
  13. Salt to taste
  14. Water – 2 cups

  1. Heat vegetable oil in a heavy bottom pot
  2. Add black pepper cons, black cardamom, star anise, cinnamon stick, bay leaf, cumin seeds and hing powder. Saute together
  3. Add carrots and green peas. Saute well for a minute
  4. Add salt to taste and mix well
  5. Add rice and mix well
  6. Add water and bring to a boil
  7. Cover and cook for 4-5 minutes on medium flame
  8. Lower the heat and simmer on low flame for 8-10 minutes
  9. Serve hot with a choice of raita or pickle.
