To prepare the masala:

  1. Heat a saucepan over medium heat and add 1 TBSP vegetable oil.
  2. Once the oil is hot, add hing powder, onions, garlic, and ginger. Sauté until the onions turn translucent.
  3. Add tomatoes, melon seeds, salt to taste, turmeric powder, red chili powder, coriander seeds powder, cumin seeds powder, and mix well.
  4. Cover the saucepan and cook for 4-5 minutes.
  5. Add 1/4 cup water and continue cooking for another 4-5 minutes.
  6. Allow the masala to cool and then grind it into a smooth paste, adding water as needed. Set aside for later use.

  1. Heat a saucepan over medium heat and add 1 TBSP vegetable oil.
  2. Once the oil is hot, add bay leaf, cinnamon stick, black cardamom, and baby corn. Sauté the corn until they start to turn golden in color.
  3. Add capsicum and the previously ground masala. Season with salt as needed and mix well.
  4. Add 1/4 cup water, cover the saucepan, and cook for 4-5 minutes or until the corn is cooked through.
  5. Finally, add garam masala powder and kasuri methi. Garnish with freshly chopped cilantro.
  6. Serve the Baby Corn Masala hot with your choice of roti or rice.
