This Allergy-Free Instant Mix Veg Pickle Recipe is free from :

Allergy-Free Ingredients:

  • Mustard Oil or any other oil – 2 TBSP
  • Fenugreek seeds – ½ TBSP
  • Kalonji seeds / Onion seeds – ½ TBSP
  • Cumin seeds – 1 TBSP
  • Mustard seeds – 1 TBSP
  • Fennel seeds – 1 TBSP
  • Hing powder – ½ Tsp
  • Turmeric powder – 1 Tsp
  • Red chili powder – 1 Tsp
  • Cauliflower florets – 1 cup
  • Carrots, finely sliced – ½ cup
  • Ginger, finely sliced – 2 Inches
  • Lemons, cut in small pieces – 1 cup
  • Lemon juice – ½ Lemon
  • Sugar – ½ TBSP
  • Salt + Pink salt to taste

Method:

  • Heat a kadai or pot over medium heat. Add oil and allow it to heat. Reduce heat, add hing powder, fenugreek seeds, kalonji seeds, cumin seeds, mustard seeds, and fennel seeds.
  • Stir in turmeric powder and red chili powder. Mix well.
  • Add cauliflower, carrots, ginger, and lemons. Stir and sauté for 2-3 minutes.
  • Season with salt, pink salt, lemon juice, and sugar. Mix thoroughly.
  • Store the pickle in a glass container. It stays fresh for 1-2 months when refrigerated.
