Vegan, Nut Free Christmas Cake

Ingredients -

 

  1. All purpose flour - 2 cups

  2. Applesauce  - 1 cup

  3. Brown Sugar - ¾ cup

  4. Sugar - ¾ cup

  5. Vegetable oil - ½ cup

  6. Hot water - ½ cup + 1 TBSP

  7. Baking powder - 2 Tsp

  8. Baking Soda - 1 Tsp

  9. Vanilla essence - 1 Tsp

  10. Nutmeg powder - ½ Tsp

  11. Cinnamon powder - ½ Tsp

  12. Pitted Dates -  chopped - ¼ cup

  13. Dry apricots - chopped - ¼ cup

  14. Dry cranberries - ¼ cup

  15. Golden Raisins - ¼ cup

  16. Tutti Frutti - ¼ cup

  17. Pumpkin seeds - ¼ cup

  18. Apple juice / grape juice / orange juice - 1 cup

Method - 

 

  1. To soak the dry fruits -  in a bowl add chopped pitted dates  , chopped apricots , cranberries , raisins and tutti frutti . Add 1 cup of either apple , grape or orange juice . Mix well and make sure all the dry fruits are well soaked in juice. Close with an airtight lid and keep for at least 8 hours.

  2. Add all purpose flour ,  baking powder and baking soda . Sieve and keep aside for later use. 

  3. In a mixing bowl , add ½ cup hot water , brown sugar and white sugar. Whisk till the sugar dissolves. Add apple juice and vegetable oil and give a quick mix.

  4. Add the all purpose flour mixture and whisk for another minute . Make sure there are no lumps . Add vanilla essence , nutmeg powder and cinnamon powder and give a quick mix. Make sure you do not over beat the batter . 

  5. Add the soaked dry fruits , you can add ¼ cup pumpkin seeds to give a little crunch. Alternatively you can add chopped almonds , cashew nuts , walnuts as per your choice . Give a quick mix. Add 1 TBSP hot water and mix again. This will make the cake soft and moist.

  6. Grease a 9 inch cake pan or a bundt cake pan with oil and dust it with all purpose flour. Remove the excess flour from the cake pan . Pour the cake batter in the pan.

  7. Preheat the oven at 350 deg fahrenheit .  Bake the cake for 15 minutes , then lower the temperature to 300 deg fahrenheit and bake for another 45-50 minutes or till a skewer inserted comes out clean.

  8. Remove the cake from the pan and allow it to cool down completely. Dust it with icing sugar .
