Ingredients For Vegan Vegetable Tehri

  1. Rice – 1 cup – Washed
  2. Cauliflower – florets – 4-5
  3. Carrots – chopped – 1
  4. Green beans – chopped – ¼ cup
  5. Potato – chopped – 1
  6. Capsicum – 1 – chopped
  7. Green peas – ¼ cup
  8. Onion – finely slit – 1
  9. Vegetable oil – 1 TBSP
  10. Cinnamon stick – ½ inch -1
  11. Bay leaf – 1
  12. Black Cardamom – 1
  13. Star Anise – 1
  14. Cloves – 2-3 pieces
  15. Black pepper cons – 3-4 pieces
  16. Cumin seeds / Jeera – 1 Tsp
  17. Hing powder – ½ Tsp
  18. Garam Masala powder – 1 Tsp
  19. Turmeric powder – 1 Tsp
  20. Red chili powder – 1 Tsp
  21. Coriander seeds powder – 1 Tsp
  22. Cumin seeds powder – 1 Tsp
  23. Salt to taste
  24. Water – 2 cups

Method –

    • In a heavy-bottomed pot, add vegetable oil and heat it.
    • Once the oil is hot, add a cinnamon stick, bay leaf, cumin seeds, and hing powder. Sauté until fragrant.
    • Add the onions to the pot and sauté them until they turn translucent.
    • Add all the vegetables to the pot and mix well.
    • Sprinkle turmeric powder, red chili powder, garam masala powder, coriander seeds powder, cumin seeds powder, and salt to taste. Mix well to coat the vegetables with the spices.
    • Pour 2 cups of water into the pot.
    • Cover the pot and let the mixture cook for 10 minutes on medium heat.
    • Afterward, lower the heat and simmer on a low flame for 20 minutes, allowing the flavors to meld together.
