Vegan Vanilla Muffin Recipe

  • tree nuts
  • dairy
  • casein
  • soy
  • egg
  • sesame
  • fish
  • shellfish

Ingredients

  1. All purpose flour / Maida – 1 cup
  2. Baking powder – 1 TSP
  3. Sugar – 1 cup
  4. Vegetable oil – ¼ cup
  5. Almond or non dairy milk – ½ cup
  6. Apple sauce – ¼ cup
  7. Vanilla essence – 1 TSP
  8. Apple cider vinegar – 1 TSP
  9. Boiling hot water – 1 TBSP
  10. Tutty-frutty – 1 TBSP – Optional

Method

  1. Mix the dry ingredients all purpose flour , baking powder . Sieve them through a sieve to make sure there are no lumps.
  2. Mix the wet ingredients apple sauce , sugar , vegetable oil , almond or non dairy milk . blend them together using a hand blender.
  3. Add dry ingredients to the wet ingredients and again blend with hand blender for just a minute or so , just to make sure there are no lumps. Do not over blend or else the cake gets less softer.
  4. Add vanilla essence and mix well.
  5. Add 1 TBSP boiling hot water and mix well.
  6. Take a muffin pan and line it up with paper cups. Scoop your muffin batter in the cups.
  7. Preheat oven at 350 deg Fahrenheit or 180 deg Celsius. Bake muffins for 20 – 25 minutes in the preheated oven or until a skewer inserted into the muffin comes clean.
