Vanilla Ice Cream

Ingredients - 

  1. Coconut cream -1 Cup 

  2. Coconut Milk - 1 cup + ¼ cup 

  3. Coconut condensed milk  - 1/4 cup 

  4. Coconut Milk powder- 1/4 cup

  5. Powder sugar - 2 TBSP

  6. Corn flour - 1 TBSP

  7. Vanilla beans - 1 or Vanilla essence - 1 Tsp

Method - 

 

  1. In a pot add coconut milk , coconut milk powder,  sugar , corn flour. Mix well and make sure there are no lumps. Cook the mixture on low flame till it gets to a boil. Cool it down completely at room temperature.

  2. In a mixing bowl add coconut cream. Beat it till you get soft peaks. Add condensed milk and mix well. 

  3. Add the cooked mixture to coconut cream and mix well. Pour the mixture in a glass container . Cover with an airtight lid and refrigerate for 2 hours.

  4. After 2 hours add the mixture to a blender , add vanilla beans or essence and pulse it for 2-3 times. 

  5. Add back to the glass container and cover with an airtight lid. Refrigerate for 7-8 hours.
