 Ingredients: For vegan tomato soup recipe

  • Tomato – roughly chopped – 4-5
  • Butternut squash or red pumpkin – cut ½ cup
  • Vegetable oil – 1 Tsp
  • Onion – roughly chopped – ½
  • Garlic – cloves – 2
  • Ginger – roughly chopped – 1 TBSP
  • Turmeric powder – ½ Tsp
  • Red Chilli powder – ½ Tsp
  • Water to adjust consistency.
  • Salt to taste

How to Make Homemade vegan tomato soup recipe Step-by-Step Instructions

  1. In a pressure cooker , 1 tsp vegetable oil on medium heat. Once hot, add onion . Saute for a minute.
  2. Add roughly chopped butternut squash . MIx well . Add garlic , ginger , turmeric powder , red chili powder and salt to taste. Mix well . Add water to adjust consistency . Close the cooker lid and cook for upto 3 whistles or for high pressure for 5-7 minutes.
  3. After the mixture cools down . Grind the tomatoes to smooth puree. Strain the puree through the strainer.
  4. Add sugar if required and mix well . Get a nice boil . Garnish with croutons and serve hot.
