- Tomato – roughly chopped – 4-5
- Butternut squash or red pumpkin – cut ½ cup
- Vegetable oil – 1 Tsp
- Onion – roughly chopped – ½
- Garlic – cloves – 2
- Ginger – roughly chopped – 1 TBSP
- Turmeric powder – ½ Tsp
- Red Chilli powder – ½ Tsp
- Water to adjust consistency.
- Salt to taste

- In a pressure cooker , 1 tsp vegetable oil on medium heat. Once hot, add onion . Saute for a minute.
- Add roughly chopped butternut squash . MIx well . Add garlic , ginger , turmeric powder , red chili powder and salt to taste. Mix well . Add water to adjust consistency . Close the cooker lid and cook for upto 3 whistles or for high pressure for 5-7 minutes.
- After the mixture cools down . Grind the tomatoes to smooth puree. Strain the puree through the strainer.
- Add sugar if required and mix well . Get a nice boil . Garnish with croutons and serve hot.
