Prepare Vegan Buttermilk: In a bowl, mix 1 cup of oat milk with 1 tablespoon of white vinegar. Set it aside for 5-10 minutes to allow it to curdle slightly.

Prepare Dry Ingredients: In a separate mixing bowl, sift together the all-purpose flour and baking powder. Add the salt and vanilla essence, then mix until well combined.

Combine Wet and Dry Ingredients: Pour the vegan buttermilk into the dry ingredient mixture. Gently mix until just combined. Be careful not to overmix; a few lumps are okay. If the batter seems too thick, add the extra 2 tablespoons of oat milk to reach your desired consistency. Let the batter rest for 5-10 minutes.

Heat the Griddle: Place an iron or nonstick griddle over medium heat. Grease it lightly with vegetable oil.

Cook the Pancakes: Once the griddle is hot, pour approximately 1/3 cup of batter onto the griddle for each pancake. Allow the pancakes to cook undisturbed until bubbles form on the surface and the edges look set, about 2-3 minutes. Carefully flip the pancakes using a spatula and cook for an additional 1-2 minutes, or until golden brown on both sides.
