Ingredients For Vegan Maharashtrian Pithla

  1. Besan / Chickpea flour – 1 cup
  2. haldi / turmeric powder – 1 Tsp
  3. Hing / Asafoetida – 1/2 Tsp
  4. Mohri / Black Mustard Seeds – 1 TSP
  5. Jerra / Cumin seeds – 1 Tsp
  6. finely chopped onion – 1/2 cup
  7. Finely chopped green chillies – 2
  8. Oil – 1 TBSP
  9. Water – 4 cups
  10. Salt to taste

Method For Preparing Maharashtrian Pithla

  1. Heat a pan and add oil. Once the oil is hot, add mustard seeds. When they start to splutter, add cumin seeds and hing.

  2. Next, introduce green chilies and sauté them.

  3. Now, add diced onions and sauté until they turn translucent.

  4. Add turmeric powder and mix thoroughly.

  5. Pour in water and stir well, bringing it to a boil.

  6. Gradually add besan (chickpea flour) while stirring continuously to avoid lumps. Initially, the mixture may appear liquid, but it will thicken as it cooks.

  7. Cover the pan with a lid and continue to cook for an additional 3-4 minutes.
