  1. Lauki / bottle gourd – finely grated – 2 cups.
  2. Almond milk or any other non dairy milk – ½ cup
  3. Sugar – ½ cup
  4. Almond flour – ¼ cup – Optional
  5. Raisins – 1 TBSP
  6. Cardamom powder – 1 TSP
  7. Vegetable oil – 1 TSP

How to Make Homemade Vegan Dudhi Halwa Recipe Step-by-Step Instructions

  1. Heat oil in a pan over medium heat.
  2. Once the oil is hot, add grated lauki (bottle gourd) and sauté for about a minute.
  3. Pour in non-dairy milk and cover the pan with a lid. Cook on a low flame.
  4. As the lauki cooks, it will release water. Continue cooking until the lauki is well cooked and the mixture becomes dry.
  5. If desired, add almond flour and mix well. This step is optional and can be skipped for a nut-free version.
  6. Add sugar to the mixture and mix well. The sugar will start melting and blending with the other ingredients.
  7. Stir in raisins and cardamom powder, ensuring they are well incorporated.
  8. Cook the mixture until it becomes dry and reaches a halwa-like consistency.
  9. Serve the Lauki Halwa hot, or if you prefer a chilled dessert, refrigerate it before enjoying.
