Ingredients For Vegan Baingan Bharta Recipe:

  • Eggplant – 1 medium size
  • Onion – finely chopped – 1
  • Tomato – finely chopped – 2
  • Black Mustard Seeds – 1 Tsp
  • Cumin Seeds – 1 Tsp
  • Hing Powder – 1/4 Tsp
  • Turmeric Powder – 1 Tsp
  • Red Chilli Powder – 1 Tsp
  • Garam Masala – 1 Tsp
  • Vegetable Oil – 1 TBSP
  • Salt to taste

Method For Preparing Baingan Bharta:

  • Rinse the eggplant and pat dry. Brush it with oil and make slits all over. Roast on direct heat, turning often for 10-12 minutes until fully roasted.
  • Once roasted, cover the eggplant and let it cool. Remove the skin and mash the eggplant thoroughly.
  • Heat oil in a pan. Add mustard seeds, let them splutter, then add cumin seeds and hing powder.
  • Sauté onions till translucent. Add chopped tomatoes and cook until mushy.
  • Add turmeric, chili powder, garam masala, and salt. Sauté for 2-3 minutes.
  • Add mashed eggplant, mix well, cover, and cook for 5 minutes.
