Vegan Veg Pulao Recipe

  1.  Basmati Rice – 1 cup
  2.  Mix vegetables of your choice – 1 cup
  3.  Shahi Biryani masala – 2 TBSP
  4.  Water – 2 cups
  5.  Vegetable oil – 1 Tbsp
  6.  Salt to taste
  7.  Jeera / cummin seeds – 1 tsp
  8.  Asafoetida – 1/4 Tsp
  9.  Turmeric powder – 1/2 Tsp

Method For Preparing Veg Pulav

  1. Heat oil in a pot or instapot. Once the oil is hot, add cumin seeds and asafoetida.
  2. Add vegetables of your choice and sauté for 2-3 minutes.
  3. Add turmeric powder, shahi biryani masala, and salt. Mix well.
  4. Add rice and sauté for another 2-3 minutes.
  5. Add water and mix well.
  6. In the Instapot, cancel the sauté mode and set the pressure cooker mode on high for 6 minutes with the vent closed. If using a pressure cooker, cook for 3 whistles.
  7. Let the steam rest for 10 minutes and then release the pressure.
  8. Serve hot with raita, dal, papad, and pickle.

Once the veg pulao is cooked, fluff it up with a fork and let it rest for a few minutes. Serve it hot with your choice of raita, yogurt, or just enjoy it on its own.
