Ingredients For Vegan Hakka Noodles

  1. Noodles – 1 pack – You can use Gluten Free Noodles for gluten free option
  2. Carrots – sliced – ½ cup
  3. Cabbage – finely chopped or sliced – ½ cup
  4. Capsicum – finely sliced – ½ cup
  5. Spring onions – finely chopped – ½ cup
  6. Onion – finely sliced – 1
  7. Ginger – Garlic – finely chopped – 1 TBSP
  8. Green chili – slit – 1
  9. Soy sauce – 2-3 TBSP
  10. Water – 8 cups
  11. Black Pepper powder to taste
  12. Salt to taste
  13. Vegetable oil

How To Make Veg Hakka Noodles Step By Step Instructions

  1. To boil noodles – add water , 1 Tsp salt and 1 Tsp oil to a pot. Let the water come to boil. Add noodles and mix well. Let the noodles cook till they are just cooked or have a bite to them . Drain the excess water and wash the noodles with cold water . Keep them aside.
  2. Heat a wok on high heat . Add oil , ginger garlic , green chili and sliced onions. Saute well for just a minute.
  3. Add all the veggies , save some spring onion for garnishing . Saute all the vegetables. Add salt to taste , black pepper powder , soy sauce and mix well.
  4. Add cooked noodles and mix well. Toss on high flame for a couple of minutes.
  5. Garnish with spring onions and serve hot with a side of chilli sauce .
