Tomato Soup

Ingredients

 

  1. Tomato - roughly chopped - 4-5

  2. Butternut squash or red pumpkin - cut ½ cup

  3. Vegetable oil -  1 Tsp

  4. Onion - roughly chopped - ½ 

  5. Garlic - cloves  - 2

  6. Ginger - roughly chopped - 1 TBSP

  7. Turmeric powder - ½ Tsp

  8. Red Chilli powder - ½ Tsp 

  9. Water to adjust consistency.

  10. Salt to taste

Method - 

 

  1. In a pressure cooker ,  1 tsp vegetable oil on medium heat. Once hot, add onion . Saute for a minute.

  2. Add roughly chopped butternut squash . MIx well . Add garlic , ginger , turmeric powder , red chili powder and salt to taste. Mix well . Add water to adjust consistency . Close the cooker lid and cook for upto 3 whistles or for high pressure for 5-7 minutes.

  3. After the mixture cools down . Grind the tomatoes to smooth puree. Strain the puree through the strainer.

  4. Add sugar if required  and mix well . Get a nice boil . Garnish with croutons and serve hot.
