Tomato Rice

Ingredients

1. Basmati Rice - 1 cup

2. finely chopped onion - 1

3. Tomato Puree - 3 tomatoes

4. Freshly grated coconut - 1/4 cup

5. Cinnamon stick - 1 inch -1

6. Bay leaf - 2

7. Green chillies - 2 finely chopped

8. salt to taste

9. Vegetable oil - 1 TBSP

10. Hing Powder -  1/4 TSP

11. Cumin seeds -  1 Tbsp

12. Hing / Asafoetida - 1/2 Tsp

13. Mohri / Black Mustard Seeds  - 1 TSP

14. water - 2 cups

Garnishing 

finely Chopped cilantro.

Method

Insta pot method - 

1. Start Insta Pot on saute mode. Once hot, add oil. Add mustard seeds, cumin seeds, hing powder . Add cinnamon sticks and bay leaf. Saute for a minute. Add chopped green chilies.

2. Add finely chopped onion and saute till they turn translucent .

3. Add tomato puree and mix well. Add salt mix well.

4. Add rice. Mix well . Saute for a minute.

5. Add freshly grated coconut. Mix well.

6. Add water and get nice boil.

7. Switch insta pot to rice mode. Close lid and steam on vent.

8. Once done . Let the steam release naturally. 

9. Garnish with cilantro and serve hot.

Stove top method - 

1. Heat a pressure cooker . Once hot, add oil. Add mustard seeds, cumin seeds, hing powder . Add cinnamon sticks and bay leaf. Saute for a minute. Add chopped green chilies.

2. Add finely chopped onion and saute till they turn translucent .

3. Add tomato puree and mix well. Add salt mix well.

4. Add rice. Mix well . Saute for a minute.

5. Add freshly grated coconut. Mix well.

6. Add water and get nice boil.

7. Close lid and pressure cook for 3 whistles.

8. Once done . Let the steam release naturally. 

9. Garnish with cilantro and serve hot.
