  • 3-4 roughly chopped Tomatoes
  • 5-6 Garlic cloves
  • 1-inch piece of Ginger
  • ½ cup Cilantro
  • ¼ cup Mint
  • 2 TBSP Dalia
  • 1 TBSP Coriander seeds
  • 1 Tsp Cumin seeds
  • ¼ Tsp Hing powder
  • 8-10 Curry leaves
  • 1 Tsp Turmeric powder
  • 1 Tsp Red chili powder
  • 1 Tsp Jaggery
  • Salt to taste
  • 1 Tsp Vegetable oil

Method:

  • Heat the Pan:

Heat a pan over medium heat. Add 1 tsp vegetable oil, coriander seeds, cumin seeds, hing powder, curry leaves, and roughly chopped tomatoes. Mix well.

  • Add Aromatics:

Add garlic cloves, ginger, cilantro, and mint. Mix thoroughly.

  • Spice It Up:

Add turmeric powder, red chili powder, salt to taste, jaggery, and dalia. Mix well. Cover and cook for 8-10 minutes on medium to low flame.

  • Cool and Blend:

Once the tomatoes are nicely cooked, switch off the heat and let the mixture cool completely. Transfer to a mixer/grinder jar and grind to a smooth paste without adding any additional water.

  • Final Tadka:

Heat 1 tsp oil, add 1 tsp mustard seeds, ½ tsp cumin seeds, whole red chilies, and curry leaves. Pour the tadka over the pachadi.
