Tomato-Basil Soup

Perfect for a wintry night or on days when down with you are down with a viral infection. Hint of Basil gives a perfect taste .

  1. Tomato - roughly chopped - 4-5

  2. Basil Leaves - roughly chopped - 8-10

  3. Vegetable oil -  2 Tsp

  4. Coconut cream - ½ cup

  5. Bay leaf - 3-4

  6. Corn flour - 1 TBSP

  7. Sugar - 1 TBSP

  8. Salt to taste

Method - 


  1. In a pan heat 1 tsp vegetable oil on medium heat. Once hot, add bay leaves . Saute for a minute.

  2. Add roughly chopped tomatoes , roughly chopped basil leaves. Mix well. Cover and cook for 8-10 minutes.

  3. Add salt to taste and Mix well. Cover and cook for another 8-10 minutes.

  4. MIx well and cook for another 5-7 minutes.

  5. After the mixture cools down . Remove the bay leaves and discard them. Grind the tomatoes to smooth puree. Strain the puree through the strainer.

  6. Heat a pan on medium heat.Once hot add 1 Tsp vegetable oil. Add corn flour and roast till it gets a golden color.

  7. Add the tomato basil puree.Add sugar and mix well

  8. Add coconut cream . Mix well and get to a nice boil. Garnish with croutons and serve hot.
