Tofu Bhurji Sandwich

Ingredients for Bhurji -

 

  1. Tofu - finely grated - 1 cup

  2. Capsicum - finely chopped  - 1 cup

  3. Onion- finely chopped  - 1

  4. Tomato finely chopped - 1

  5. Green chillies - finely chopped 3-4 

  6. Ginger-garlic paste - 1 TBSP

  7. Garam masala powder - 1 TSP

  8. Hing powder - 1/4 Tsp

  9. Turmeric powder - 1 Tsp

  10. Red chili powder - 1 Tsp

  11. Vegetable Oil - 1 TBSP

  12. Salt to taste.

  13. Cilantro finely chopped for garnishing.

 

Ingredients for Sandwich - 

 

  1. Bread - ( Gluten Free if needed ) - 2 slices

  2. Mint Chutney -  1 TBSP

  3. Vegan Butter - 2 TBSP

Method  For Bhurji- 

 

1. Heat a Pan on medium flame. Once hot add oil.

2. Once the oil is hot add hing powder and  green chillies.

4. Add Onions and saute till they turn translucent.

5. Add finely chopped tomatoes and saute well till they turn mushy.

6. Add ginger-garlic paste and saute well for another 3-4 minutes or till the raw smell of garlic is gone.

7. Add the other masala’s - turmeric powder , garam masala powder . Mix well and saute the masala’s for 3-4 minutes. Add Salt to taste and mix well.

8. Add chopped capsicum and mix well. Let it cook for a minute or two.

9. Add grated tofu. Mix well. Cover and cook the tofu for another 5 minutes.

10. Garnish finely chopped cilantro. Serve hot with roti or paratha or naan of your choice. 


 

Method - Sandwich

 

  1. Apply vegan butter on one side of both bread slices. Apply mint chutney on one slice. Spread 2 TBSP of tofu bhurji . Place the 2nd slice, butter side inside. 

  2. Gril the sandwich till both the sides get a nice golden brown color.
