Ingredients For Tiffin Style Vegan Dal Recipe
- Toor Dal – 1 cup
- Haldi / Turmeric powder – 1 Tsp
- Hing powder – ½ Tsp
- Vegetable oil – 1 TBSP
- Mustard seeds – 1 Tsp
- Cumin seeds – 1 Tsp
- Curry leaves – 4-5
- Onion – finely chopped – 1
- Tomato finely chopped – 1
- Freshly grated coconut – ¼ cup
- Garlic cloves – 3-4
- Green chilies – 2-3
- Jaggery – 1 Tsp
- Salt to taste
- Water – 4 cups
- Freshly chopped cilantro for garnishing.
Method –
- Wash toor dal and add to a pressure cooker pot . Add turmeric powder , ¼ Tsp hing powder and ½ Tsp oil . Add 2 cups of water . Pressure cook the dal for 3 whistles .
- For Masala – in a grinder jar add freshly grated coconut , garlic , green chilies and grind them coarsely.
- Heat a pot on medium heat. Once hot , add oil , mustard seeds , cumin seeds , hing powder and curry leaves. Add onion and saute till they turn translucent.
- Add tomatoes and salt to taste and saute till they turn mushy. Add grinded masala and saute for a couple of minutes.
- Add cooked dal and mix well. Add water to adjust consistency and jaggery . Get the dal to a nice boil and simmer on low heat for 3-4 minutes.
- Garnish with finely chopped cilantro and serve hot with roti and rice.
