Fried Masala / Tala Masala

Method - 

 

  1. In a pan add 1 Tsp oil . Add finely slit onion . Saute until the onion starts turning brown.

  2. Add ginger , garlic . Saute till onion , ginger , garlic turn brown. Remove and keep aside.

  3. In the same pan , add 1 Tsp oil . Add coriander seeds , Badishep / Fennel seeds , Sesame seeds / Til , Cinnamon sticks , Poppy seeds , Star Anise , Cloves , Black pepper , Bay leaf . Saute for a minute , till the spices start turning fragrant . remove and keep aside.

  4. In the same pan , add 1 Tsp oil . Add coconut flakes and saute till it turns brown. Remove aside and let it cool.

  5. Dry grind all the masala first. Add water and grind into a smooth paste.
