  • Onion – 1 finely chopped
  • Capsicum – Chopped in cubes – ½ cup
  • Carrots – Chopped in cubes – ½ cup
  • Corns – ½ cup
  • Tomato puree – 1 tomato
  • Tomato – 1 finely chopped
  • Rajma – boiled – ½ cup
  • Black Beans – boiled – ½ cup
  • Vegetable oil – 1 TBSP
  • Garlic – paste – ½ Tsp
  • Taco seasoning – 1 TBSP
  • Vegan cheese of your choice
  • Water – 1 cup
  • Salt to taste
  • Cilantro – finely chopped

How to Make Vegan taco soup recipe Step-by-Step Instructions

  • In a pot add vegetable oil and finely chopped onions. Saute for just about a minute.
  • Add all the other vegetables , salt to taste and water. Mix well. Cover and cook on medium flame for 10-15 minutes. Add additional water if required to maintain the soup consistency.
  • Serve hot with a side of garlic bread or bread stick.
