Seviyan Kheer / Vermicelli Porridge  

Vermicelli -  which in italian literally means “Little Worms”  is a traditional type of pasta round in section similar to spaghetti. Traditionally made from rice, sevai make an excellent option for gluten free diet.

Ingredients

1. Sevai  - 1/2 cup

2. Water - Boiling Hot -  2 cups

3. Almond milk or any non dairy milk -  3 cups

4. Sugar - 1/2 cup

5. Vegetable Oil -  1 TBSP

5. cardamom powder  - 1/2 tsp

6. raisins  , almonds for Garnishing -  Optional.

Method

 

1.  Heat a pan. Add Oil and Seviyan. Roast seviyan  on medium heat till they turn golden brown in colour.

2. Add raisins and almonds ( totally optional) .

3. Add boiling hot water and mix well.  Let the sevai cook .

4. Add non dairy milk. preferably warm.  Get the mixture to a nice boil.

5. Add sugar and mix well. Cook the mixture for 5 minutes.

6. Add Cardamom powder and raisins of garnish.
