This dish is a staple in Punjabi households and is loved by people all over the world for its unique blend of flavors and wholesome nutrition.

Ingredients For Sarson Ka Saag & Makke Di Roti

  1. Sarson leaves – finely chopped – 2 cups
  2. Spinach – finely chopped – 2 cups
  3. Onion – finely chopped – 2
  4. Corn flour  –  4 TBSP
  5. Garlic cloves – 10-12
  6. Ginger – 2 inch
  7. Green Chilies – 3-4
  8. Vegetable oil – 1 TBSP
  9. Water – 4cups
  10. Salt to taste

How to Make  Deliciously  Sarson Ka Saag & Makke Di Roti : Step-by-Step Instructions

  1. In a mortal and pastel or a grinder jar, add 5-6 garlic cloves, ginger 1 inch , green chilies. Crush them into a coarse paste.
  2. In a pot bring 4 cups of water to boil, add salt to taste, Sarson leaves, spinach leaves, crushed ginger-garlic-green chiles. Slow Cook on medium low flame. Keep on stirring and mashing in between. Cook till it is nice and creamy. This can take good more than an hour to cook on low medium flame.
  3. Add corn flour 1 TBSP at a time. Mix well and make sure there are no lumps.
  4. For Tadka – Heat a kadai on medium heat. Once hot add , vegetable oil , 5-6 garlic cloves finely chopped, 1 inch ginger finely chopped. Saute for a minute.
  5. Add chopped onions and saute till they turn translucent. Add cooked saag and mix well. Add salt to taste, remember you added salt while cooking the saag. Mix well. 
  6. Serve hot with Makke ki roti.

Tips – 

  1. Do not cook the saag in pressure cooker, it will change the color and texture.
  2. For a variation you can use substitute 2 cups spinach, with 1 cup spinach and 1 cup methi leaves.
  3. You can cook a big batch of saag and deep freeze it. While using get the desired portion out , thaw and just prepare the tadka and add the cooked saag.

Ingredients Makke ki roti- 

  1. Mooli / Diacon –  grated  – ¼ cup
  2. Green chilies – paste – 1 Tsp
  3. Coriander cumin seeds powder – 1 Tsp
  4. Finely chopped cilantro or finely chopped fresh mooli leaves  – ⅓ cup
  5. Corn flour – 1 cup
  6. Salt to taste .

How to Make  Deliciously  Sarson Ka Saag & Makke Di Roti : Step-by-Step Instructions

  1. Mix the grated mooli , Salt . Cover and keep aside for 15-20  minutes.
  2. Add green chilies paste , coriander cumin powder , finely chopped cilantro and mix well. Add corn flour and knead into a soft dough. It should not need additional water to knead.
  3. Take a butter paper  and place it on a rolling board. Take a dough ball and put it on butter paper and start flattening the dough into the circle with your palm like you are making a thalipeeth. Apply some water on your palm while making roti.
  4. Heat the griddle or pan on medium low flame. With the help of butter paper pick up the roti and place it on the griddle . Apply oil and roast on both sides till it gets nice golden brown spots .

Serving and Enjoying Sarson Ka Saag and Makke Ki Roti

Serve Sarson Ka Saag in a dish with a ghee garnish. Accompany it with warm Makke Ki Roti on the side. Enjoy by tearing off pieces of the roti and dipping them in the saag for a delightful and authentic Punjabi experience.
