Ingredients - 

  1. Cauliflower - florets - 4-5 

  2. Carrots - chopped - 1

  3. Green beans  - chopped - ¼ cup

  4. Potato - chopped  - 1

  5. Capsicum - 1 - chopped

  6. Green peas - ¼ cup

  7. Onion - roughly chopped - 1 

  8. Tomato - roughly chopped - 1

  9. Garlic - 3-4 cloves

  10. Ginger - 1 inch

  11. Vegetable oil - 2 TBSP

  12. Bay leaf - 1 

  13. Cloves - 3-4

  14. Pepper cons - 4-5

  15. Turmeric powder - 1 Tsp

  16. Red chili powder - 1 Tsp

  17. Cumin powder - 1 Tsp

  18. Garam masala - 1 Tsp

  19. Salt to taste 

  20. Water - ½ cup

  21. Coconut cream - 2 TBSP - optional

  22. Kasuri Methi - 1 TBSP

  23. Finely chopped cilantro

Method - 

  1. Masala - Place a pan on medium heat , once hot add 1 TBSP vegetable oil. Add chopped onions and saute for 2-3 minutes. Add chopped garlic and ginger. Add chopped tomatoes and saute till they turn mushy.  Add to a grinder jar and grind into a fine paste.

  2. In the same pan add 1 TBSP vegetable oil. Add bay leaf , cloves , and pepper cons . Add red chili powder , turmeric powder . Mix well. Add the grinded masala and saute for 1-2 minutes. Add water , salt to taste , cumin powder and garam masala and mix well.

  3. Add the chopped veggies and mix well. Cover and cook for 8-10 minutes or till the veggies are cooked. 

  4. Garnish with coconut cream , kasuri methi and freshly chopped cilantro.
