Allergy-Friendly Subz Handi Recipe Ingredients

  • Cauliflower – florets – 4-5
  • Carrots – chopped – 1
  • Green beans – chopped – ¼ cup
  • Potato – chopped – 1
  • Capsicum – 1 – chopped
  • Green peas – ¼ cup
  • Onion – roughly chopped – 1
  • Tomato – roughly chopped – 1
  • Garlic – 3-4 cloves
  • Ginger – 1 inch
  • Vegetable oil – 2 TBSP
  • Bay leaf – 1
  • Cloves – 3-4
  • Pepper cons – 4-5
  • Turmeric powder – 1 Tsp
  • Red chili powder – 1 Tsp
  • Cumin powder – 1 Tsp
  • Garam masala – 1 Tsp
  • Salt to taste
  • Water – ½ cup
  • Coconut cream – 2 TBSP – optional
  • Kasuri Methi – 1 TBSP
  • Finely chopped cilantro

Method For Preparing Vegan Sabz Handi Recipe

For the Masala:

  •  Place a pan on medium heat. Once hot, add 1 TBSP of vegetable oil.
  • Add chopped onions and sauté for 2-3 minutes.
  • Add chopped garlic and ginger. Continue to sauté.
  • Add chopped tomatoes and sauté until they turn mushy.
  • Transfer this mixture to a grinder jar and grind it into a fine paste.

For the Gravy:

  • In the same pan, add 1 TBSP of vegetable oil.
  • Add bay leaf, cloves, and peppercorns.
  • Sprinkle red chili powder and turmeric powder. Mix well.
  •  Add the ground masala paste and sauté for 1-2 minutes.
  • Pour in water, add salt to taste, cumin powder, and garam masala. Mix thoroughly.
  • Add the chopped veggies and mix well. Cover and cook for 8-10 minutes or until the veggies are tender.

Garnish with:

  • Coconut cream 
  • Kasuri methi
  • Freshly chopped cilantro
