- Potato - finely chopped - 1/2 cup
- Corn kernels - 1/2 cup
- Capsicum / Green bell pepper - finely chopped - 1/2 cup
- Edamame beans - 1/2 cup
- Beetroot - finely chopped - 1/2 cup
- Green peas - 1/2 cup
- Spinach - finely chopped - 1/2 cup
- Carrots - finely chopped - 1/2 cup
- Tomato puree - 1/2 cup
- Onion - finely chopped - 1/2 cup
- Ginger - garlic - finely chopped - 1 Tsp
- Vegetable oil - 1 Tsp
- Fresh basil - finely chopped - 1TBSP
- Oregano- 1 Tsp
- Thyme - 1 Tsp
- Salt to taste.
- Water - 2 cups
How to Make gluten-free 10 vegetable soup recipe Step-by-Step Instructions
- In a pot add vegetable oil and finely chopped ginger and garlic. Give a quick stir and add onions. Saute for just about a minute.
- Add all the other vegetables , salt to taste and water. Mix well. Cover and cook on medium flame for 10-15 minutes. Add additional water if required to maintain the soup consistency.
- Add fresh basil , Thyme and oregano and mix well. With the help of a hand blender , grind the mixture into a coarse soup. This gives the soup a nice bite like structure .
- Serve hot with a side of garlic bread or bread stick.
