Ingredients for Vegan Bhurji -
- Tofu - finely grated - 1 cup
- Capsicum - finely chopped - 1 cup
- Onion- finely chopped - 1
- Tomato finely chopped - 1
- Green chillies - finely chopped 3-4
- Ginger-garlic paste - 1 TBSP
- Garam masala powder - 1 TSP
- Hing powder - 1/4 Tsp
- Turmeric powder - 1 Tsp
- Red chili powder - 1 Tsp
- Vegetable Oil - 1 TBSP
- Salt to taste.
- Cilantro finely chopped for garnishing.
Ingredients for Sandwich -
- Bread - ( Gluten Free if needed ) - 2 slices
- Mint Chutney - 1 TBSP
- Vegan Butter - 2 TBSP
Method For Bhurji-
- Heat a Pan on medium flame. Once hot add oil.
- Once the oil is hot add hing powder and green chillies.
- Add Onions and saute till they turn translucent.
- Add finely chopped tomatoes and saute well till they turn mushy.
- Add ginger-garlic paste and saute well for another 3-4 minutes or till the raw smell of garlic is gone.
- Add the other masalas - turmeric powder , garam masala powder . Mix well and saute the masalas for 3-4 minutes. Add Salt to taste and mix well.
- Add chopped capsicum and mix well. Let it cook for a minute or two.
- 9. Add grated tofu. Mix well. Cover and cook the tofu for another 5 minutes.
- 10. Garnish finely chopped cilantro. Serve hot with roti or paratha or naan of your choice.
Method - Sandwich
- Apply vegan butter on one side of both bread slices. Apply mint chutney on one slice. Spread 2 TBSP of tofu bhurji . Place the 2nd slice, butter side inside.
- Grill the sandwich till both the sides get a nice golden brown color.
