This Puran Poli Recipe is free from :

Ingredients For Vegan Purn Poli:

For Puran (Stuffing):

  • 1 cup Tur dal (split pigeon peas)
  • ¾ cup Crushed jaggery
  • 2 tbsp Sugar
  • ½ tsp Cardamom powder
  • ½ tsp Nutmeg powder
  • 3 cups Water

For Outer Covering (Poli Dough):

  • 1 cup Whole wheat flour
  • Water (for kneading)
  • Salt (to taste)
  • ⅓ cup Vegetable oil

Method:

For Puran (Stuffing):

  • Wash the turdal and soak it in 2 cups of water for at least an hour. Drain the excess water.
  • Pressure cook the soaked dal with 3 cups of water until tender (3-4 whistles). Allow the pressure to release naturally.
  • In a pot, combine the cooked dal, jaggery, and sugar. Cook on low to medium heat until the mixture thickens and starts leaving the sides of the pot.
  • Add cardamom powder and nutmeg powder. Mix well and cook until the mixture reaches a thick consistency. Remove from heat and set aside.

For Outer Covering (Poli Dough):

In a bowl, knead a soft, pliable dough using whole wheat flour, water, salt, and vegetable oil. Cover and let it rest for 2-3 hours.

For Puran Poli (Flatbread):

  1. Heat a heavy griddle over medium-high heat.
  2. Take a lemon-sized ball of dough and roll it into a circle using rice flour.
  3. Place a lemon-sized ball of puran in the center of the rolled dough. Enclose the stuffing by gathering the edges of the dough.
  4. Roll the stuffed dough into a thin flatbread.
  5. Gently place the rolled puran poli on the heated griddle. Cook evenly on both sides until golden brown, adding oil as needed.
