Ingredients For Vegan Mexican Rice Recipe

  1. Long grain rice / Basmati Rice - 1 cup
  2. Mixed vegetables - finely chopped beans , capsicum , carrots and corns - 1 and 1/2 cup
  3. Tomato puree - 1 tomato
  4. Onion - 1 finely chopped
  5. Tomato - 1 finely chopped
  6. Rajma - boiled - 1/2 cup
  7. Cumin seeds - 2 Tsp
  8. Coriander seeds - 1 Tsp
  9. Oregano - 1 Tsp
  10. Red chilli powder / paprika powder - 1 Tsp
  11. Vegetable oil - 1 TBSP
  12. Garlic - finely chopped - 3-4 cloves .
  13. Jalapenos or green chillies - chopped roughly - 2-3
  14. Salt to taste

Method For Mexican Rice -

  1. Dry roast cumin seeds and coriander seeds in a pan for 2-3 minutes until they start releasing aroma.
  2. Grind the roasted seeds with oregano into a fine powder and mix in red chilli powder.
  3. Cook long-grain rice with 2 cups of water and salt until fully cooked.
  4. In a pan, heat vegetable oil and saut onion until it turns soft.
  5. Add garlic and jalapenos and saut for another 2-3 minutes.
  6. Add mixed veggies and salt to taste. Mix well, cover and cook for 4-5 minutes or until the vegetables are cooked.
  7. Add tomato puree, grinded masala, boiled rajma, boiled rice and mix well.
  8. Add finely chopped tomato and stir. Cover and cook for 3-4 minutes.
  9. Serve hot with salsa or guacamole of your choice.
