Matar Karanji, also known as Stuffed Green Peas Dumplings, is a delightful and savory Indian snack that boasts a symphony of flavors and textures. A karanji is traditionally a deep-fried pastry, but this unique rendition replaces the sweet fillings with a savory medley of green peas, spices, and aromatic herbs, resulting in a snack that is not only visually appealing but also incredibly appetizing.

Ingredients For Vegan Matar Karanji Recipe

For covering -

  1. Whole wheat flour - 1 cup
  2. Ajwain / Caraway seeds - 1 Tsp
  3. Salt to taste
  4. Vegetable oil - Hot - 2 Tsp
  5. Water - 1/4 cup

For Stuffing -

  1. Matar / Green Peas - 1 cup
  2. Freshly grated Coconut - 1/4 cup
  3. Vegetable oil - 1 TBSP
  4. Cumin seeds - 1 Tsp
  5. Hing powder - 1/4 Tsp
  6. Curry leaves - 4-5
  7. Ginger-Garlic - green chilies paste - 1 TBSP
  8. Turmeric powder - 1 Tsp
  9. Garam Masala - 1 Tsp
  10. Coriander - cumin seeds powder - 1 Tsp
  11. Salt to taste
  12. Lemon juice - 2 Tsp
  13. Water - 3-4 TBSP

For Assembly -

  1. Oil for deep frying.

Method For Preparing Matar Karanji

For Covering -

  1. In a pot add whole wheat flour , ajwain seeds , salt to taste. Add hot oil. Mix well , till the flour when squeezed holds shape. Add water , little at a time and knead into a soft dough. Brush with oil . Cover and keep aside for 30-40 minutes.

For Stuffing.

  1. In a pan add oil . Once hot , add cumin seeds , hing powder , curry leaves and ginger-garlic-green chilies paste. Saute for a minute or two.
  2. Add freshly grated coconut and mix well. Add garam masala , coriander-cumin seeds powder , turmeric powder and mix well.
  3. Add fresh green peas and mix well. Add water 2-3 TBSP . Cover and cook for 5-7 minutes.
  4. Add salt to taste and mix well. Cover and cook for another 2-3 minutes. Add freshly squeezed lemon juice and mix well. Let the mixture cool down completely.

For Assembling -

  1. Take a small lemon size ball of dough. Roll it into a round disc. Size of a puri.
  2. Fold disc into half. Fill in the stuffing. Brush the edges with water and seal them together. This way, prepare all karanjis.
  3. Heat oil in kadai for deep frying. Once hot , deep fry all karanji to a nice golden brown color.
