Plain Khobra Vadi 

Ingredients for Coconut Barfi

  1. Grated Coconut – 3 cups
  2. Sugar – 2 cups
  3. Coconut cream – 3 TBSP
  4. raisins – 1 Tbsp
  5. cardamom powder – 1 Tsp

Method  Coconut Barfi

  1.  Add grated coconut , sugar , coconut cream. Mix well. Cook on medium flame.
  2.  When the mixture begins to leave the sides of the pan, add raisins , cardamom powder.
  3.  Cook for another 2-3 minutes.
  4.  Grease a plate. Level it well and make a square.
  5.  Allow to cool for about 10 minutes. Cut in square or diamond shape.

Gajar Khobra Vadi 

Ingredients For Gajar Khobra Vadi

  1. Freshly Grated Coconut – 1 and ½ cups
  2. Sugar – 1 cup
  3. Carrot – grated – 1 cup
  4. Coconut cream – 2 TBSP
  5. Raisins – 1 Tbsp
  6. Cardamom powder – 1 Tsp

Method

  1.  Add grated coconut , sugar , grated carrots , coconut cream. Mix well. Cook on medium flame.
  2.  When the mixture begins to leave the sides of the pan add cardamom powder. Cook for another 2-3 minutes.
  3.  Grease a plate. Add the cooked mixture on the plate and level it well. Make a square.
  4.  Garnish with raisins. (Optional).
  5.  Allow to cool for about 10 minutes. Cut in square or diamond shape.
  6.  Store in an airtight container and remains good for a week outside refrigerator and for a month when kept inside

Mango Khobra Vadi - 

Ingredients For Mango Barfi

  1. Grated Coconut – 3 cups
  2. Sugar – 1 cup
  3. Mango juice also called as amras( freshly squeezed or canned)- 1 cup
  4. Raisins – 1 Tbsp
  5.  Cardamom powder – 1 Tsp

Method  - 

  1. Add grated coconut , sugar , mango juice to a wok. Mix well. Cook on medium flame.
  2.  When the mixture begins to leave the sides of the pan, add raisins , cardamom powder.
  3.  Cook for another 2-3 minutes.
  4.  Grease a plate. Transfer the cooked mixture on the greased plate. Level it well and make a square.
  5.  Garnish with almond slices. (Optional).
  6.  Allow to cool for about 10 minutes. Cut in square or diamond shape.
