Ingredients: For Vegan Tomato Basil Soup Recipe
- Tomato - roughly chopped - 4-5
- Basil Leaves - roughly chopped - 8-10
- Vegetable oil - 2 Tsp
- Coconut cream - 1/2 cup
- Bay leaf - 3-4
- Corn flour - 1 TBSP
- Sugar - 1 TBSP
- Salt to taste
How to Make Vegan Tomato Basil Soup Recipe Step-by-Step Instructions
- In a pan heat 1 tsp vegetable oil on medium heat. Once hot, add bay leaves . Saute for a minute.
- Add roughly chopped tomatoes , roughly chopped basil leaves. Mix well. Cover and cook for 8-10 minutes.
- Add salt to taste and Mix well. Cover and cook for another 8-10 minutes.
- MIx well and cook for another 5-7 minutes.
- After the mixture cools down . Remove the bay leaves and discard them. Grind the tomatoes to smooth puree. Strain the puree through the strainer.
- Heat a pan on medium heat.Once hot add 1 Tsp vegetable oil. Add corn flour and roast till it gets a golden color.
- Add the tomato basil puree.Add sugar and mix well
- Add coconut cream . Mix well and get to a nice boil. Garnish with croutons and serve hot.
