  • 6 slices Gluten-Free Bread
  • 4 cups Non-dairy Oats Milk
  • ¼ cup Sugar
  • ½ cup Mango Pulp
  • Mango, sliced
  • 1 tbsp Corn Starch
  • 1 tsp Cardamom Powder
  • ¼ tsp Nutmeg Powder (optional)

Method:

For Rabdi:

  • Heat a pan on medium flame. Add oats milk and bring it to a boil.
  • Reduce the flame and simmer for 5 minutes, stirring frequently.
  • Add sugar and mix well.
  • Mix cornstarch with 3-4 tablespoons of cold oat milk in a bowl to make a corn slurry.
  • Add the corn slurry to the rabadi, stirring continuously to avoid lumps.
  • Cook on low flame for another 5-7 minutes.
  • Let it cool completely, then add mango pulp and nutmeg. Mix well.

Assembling the Cake:

  • In a setting dish or pan, add a layer of rabadi.
  • Remove the sides of the bread and cut into roundels.
  • Place the first layer of bread roundels and spread a layer of sliced mango on top.
  • Place the second layer of bread roundels and press lightly.
  • Add a generous amount of rabadi on top. Garnish with melon seeds and rose petals if desired.
  • Save some rabadi to add on top while serving.
  • Cover and allow to set in the fridge to serve it cool.
