Ingredients For Butternut Squash Bhaji Recipe
- Butternut Squash - Peeled and cut into small cubes - 1 Cup
- Vegetable oil - 1 TBSP
- Mustard seeds - 1 TSP
- Cumin seeds - 1 TSP
- Hing powder - 1/4 Tsp
- Curry leaves - 5-6 leaves
- Turmeric powder - 1 Tsp
- Red Chilli powder - 1 Tsp
- Kala Masala / Garam Masala - 1 TBSP
- Salt to taste
- Water - 1/3 cup
Method
- Heat a Pan on medium flame. Once hot add oil.Add mustard seeds, once they splutter , add cumin seeds and hing powder. Add curry leaves.
- Add the cut butternut squash and mix well.
- Add turmeric powder , chilli powder, kala masala , salt to taste.Mix well and saute for another 2-3 minutes.
- Add water and mix well. Cover and cook for 5-7 minutes.
- Garnish with finely cut cilantro and serve hot with a roti or paratha.
