Vegan Baked Vada Pav: A Healthy Twist on a Classic Street Food Favorite

Ingredients for Vegan Pav -

  1. Rava / Suji - Fine - 3.5 cups
  2. Non dairy milk / water - warm - 1 + 1/2 cup
  3. Sugar - 2 Tsp
  4. Yeast - 2 + 1/4 Tsp
  5. Salt - 1 + 1/2 Tsp
  6. Olive oil - 3 TBSP

For Stuffing -

  1. Potato - boiled - smashed - 1 cup
  2. Onion - finely chopped - 1
  3. Ginger-garlic Paste - 1 Tsp
  4. Green Chili paste - 1 Tsp
  5. Haldi / Turmeric powder - 1 Tsp
  6. Lemon juice - 1 Tsp
  7. Salt to taste.
  8. Mint chutney

Method -

For stuffing -

  1. Add boiled potatoes , onion and mix well. Add the turmeric powder , ginger-garlic paste , green chili paste , salt to taste , lemon juice and mix well.

For Pav -

  1. In a bowl add 1/2 cup warm non dairy milk or warm water , sugar and yeast. Mix well . Keep aside for 10 minutes .
  2. Get the fine rava or suji in a blender jar and pulse for 3-4 times to get a fine texture. If you do not get fine rava , then you can get any rava and just pulse it in fine powder.
  3. Add all rava to the yeast mixture. Knead for at least 10 minutes. Till you get a nice soft dough.
  4. Add 3 TBSP vegetable oil and again knead for 5 minutes. Cover and rest the dough for at least an hour.
  5. Dough raises almost double its size. Knead again . Divide the dough into lemon shape balls of equal size.
  6. Grease a baking tray with vegetable oil.
  7. Take one dough ball , and use the between the palm of your hands. Then gently stretch the sides to form a 3 inch cup. Apply mint chutney to pav . Place the stuffing in the center and cover the stuffing with covering carefully and roll into a ball.
  8. Place the balls in the greased tray. Brush them with non dairy milk or water. Cover and rest for 20 minutes.
  9. Dough ball rises almost twice in size. Alternatively sprinkle a seasoning of choice on the pav. Preheat an oven at 420 deg farenheit . Bake the rolls for 20 minutes.
  10. Brush with vegetable oil. Cover with moist cloth and keep aside for 20 minutes.
  11. Enjoy the fresh , warm Dinner rolls .
