Ingredients For Vegan Raisin Pulao

  1. Basmati Rice – 1 cup
  2. Vegetable oil – 2 TBSP
  3. Sunflower seeds – ¼ cup
  4. Golden raisins – ¼ cup 
  5. Bay leaf – 2
  6. Black Cardamom- 2 
  7. Cinnamon – ½ inch
  8. Star Anise – 2
  9. Black pepper cons – ½ Tsp
  10. Cloves – 4-5
  11. Cumin seeds – 2 Tsp
  12. Hing powder – ½ Tsp
  13. Charoli – 1 TBSP
  14. Water – 2 cups
  15. Saffron – 1 Tsp
  16. Salt to taste

Method For Preparing Raisin Pulao –

  1. Heat a kadai or pot on Medium heat. Add 2 TBSP oil.
  2. Add sunflower seeds and saute them till they are golden in color. Remove and keep them aside for later use.
  3. Add golden raisins and saute them till they puff up. Remove and keep aside for later use.
  4. Add the dry spices –  bay leaf , black cardamom , cinnamon , star anise , black pepper  cons , cloves , cumin seeds ,  hing powder.  Mix well and saute the spices just till they start releasing aroma.
  5. Add washed basmati rice  , charoli  and mix well.
  6. Add salt to taste , water , sauted sunflower seeds and raisins , saffron mixed with 1 TBSP water  and mix well.
  7. Cover and cook for 10 minutes on medium heat. Afterwards lower the heat and simmer on low flame for 20 minutes.
  8. Serve hot with any curry of your choice. Goes well with spicy curries.
