Indian Style Pink Sauce Pasta

Ingredients - 


 

  1. Pasta - shell or Penne - 1 cup - Use gluten-free as per your requirement.

  2. Onion - finely chopped - 1

  3. Corn kernels - ¼ cup

  4. Bell pepper - finely chopped  - ½

  5. Marinara sauce / Pizza sauce - 2 TBSP

  6. Turmeric powder - ½ Tsp

  7. Red chili powder - ½ Tsp 

  8. Non-dairy milk - ½ cup

  9. Olive oil - 2 TBSP

  10. Oregano - ½ Tsp

  11. Water

  12. Salt to taste

  13. Vegan butter - ½ TBSP

  14. Vegan cheese

Method - 

 

  1. To cook pasta - Bring water to boil, add 1 Tsp salt and 1 TBSP olive oil and mix well. Add pasta and boil till pasta is cooked. Drain excess water and keep the pasta aside for later use.

  2. Heat a saucepan on medium heat. Add olive oil, onions, sauté for 1-2 minutes. Add corn kernels and sauté for 2-3 minutes, or till the corns are ½ cooked.

  3. Add Marinara sauce, turmeric powder, red chili powder, cooked pasta, salt to taste and mix well. 

  4. Add bell peppers and mix well. 

  5. Add non-dairy milk and cook till the corns are cooked.

  6. Add vegan butter and oregano and give a quick mix.

  7. Garnish with vegan cheese and serve hot.
