Navratan Pulao

The name Navratan is been inspired from emperor Akbar's Navratan's in darbar. Though any navratan can be made with 8 or 10 ratan's. The cooking technique is most important. This dishes is more on sweeter side , with absolutely no addition of chilies or chili powder. 

Ingredients -

 

  1. Vegetable oil -  4 TBSP

  2. Potato -  1 - peeled and cut into cubes

  3. Carrot -  1 - peeled and cut into cubes

  4. French beans -  4-5 cut into pieces 

  5. Green peas - ⅓  cup 

  6. Cauliflower flowerettes - ½ cup

  7. Tofu - cut into cubes - ½ cup

  8. Bay leaf -  2

  9. Cinnamon pieces - 2-3

  10. Black pepper - 4-5

  11. Cloves - 2-3

  12. Black Cardamom - 1

  13. Green Cardamom - 2-3

  14. Cumin seeds - 1 Tsp

  15. Onion Sliced -  1

  16. Ginger - Garlic paste - 1 TBSP

  17. Charoli - 1 TBSP

  18. Raisins - 1 TBSP

  19. Basmati Rice - boiled  - 2 cups

  20. Saffron - 1 TSP mixed with 1 TBSP non dairy milk

  21. Lemon juice - 1 TBSP

  22. Salt to taste

Method -

 

  1. In a pan heat 3 TBSP of oil. Add cut potatoes saute for a minute. Add cut carrots , french beans , green peas one at a time. Saute well. Cover and cook for 3-4 minutes. Remove the vegetables and keep aside .

  2. In the same pan add cauliflower and saute well till it turns nice golden color. Remove and keep aside with sauteed vegetables.

  3. In the same pan add tofu and saute till it gets a nice golden color. Remove and keep aside with  sauteed vegetables.

  4. In a pot add 1 TBSP of oil. Once hot add bay leaves, cinnamon pieces , black pepper cons , cloves , black cardamom , green cardamom , cumin seeds . Saute well. 

  5. Add sliced onions and saute well till they turn golden colen.

  6. Add ginger garlic paste and saute well.

  7. Add fried veggies and mix well.

  8. Add boiled rice and salt. Mix well.

  9. Add saffron with non dairy milk and mix well. Close with a lid and simmer on low heat for 10 minutes.

  10. Remove the lid mix well. Add 1 TBSP lemon juice and mix well. Serve hot.
