  1. Toor Dal – 1 cup
  2. Moong dal – ½ cup
  3. Masoor dal – ¼ cup
  4. 1 finely chopped tomato
  5. 1 bunch finely chopped palak/spinach
  6. 2-3 garlic cloves crushed
  7. Curry leaves – 4-5
  8. Hing / Asafoetida – 1/2 Tsp
  9. Turmeric powder – 1 Tsp
  10.  Mustard seeds – 1 Tsp
  11. Cumin seeds – 1 Tsp
  12. Red chili powder – 1 Tsp
  13. Tamarind Paste –  1 TBSP
  14. Jaggery powder – 1 TBSP
  15. Vegetable oil – 1 Tbsp
  16. salt to taste
  17. water to adjust consistency.

Cooking Process:

  • To prepare Mix Dal Palak, start by thoroughly washing the lentils and combining them with turmeric powder, red chili powder, and fresh spinach. 
  • Pressure cook the mixture to perfection. In a separate pan, create a tempering with mustard seeds, cumin seeds, garlic, and curry leaves. 
  • Add tomatoes to the tempering, creating a flavorful base for the dal.
  • Once the lentils and spinach are cooked, incorporate the tempering into the mixture. Adjust the consistency with water, add salt to taste, and introduce the tangy twist with tamarind paste. 
  • To balance the flavors, a hint of jaggery powder adds a touch of sweetness. Let the mixture simmer, allowing the ingredients to meld into a harmonious blend.
