Mint and basil griddled peach salad – a balanced vegan meal

Almost every other person is turning vegan as it is very healthy for the body. A vegan diet has many advantages, such as weight loss, nutrient-rich food, low cholesterol and blood pressure levels and many more. It also provides the needed nutrients and keeps you fit and healthy.

Abstaining from using animal products, especially in your diet, is known as veganism. It also refers to a philosophy that rejects treating animals as a commodity. A vegan is someone who adheres to the ideology or diet. Veganism is of different types, such as dietary, ethical, or environmental veganism.

Mint & basil griddled peach salad is an excellent and delicious vegan meal loaded with vitamins and minerals and has various flavors. It is easy to make and gets digested easily. One can have it at any part of the day. Make sure to have a look at the recipe

Recipe on how to make Mint and basil griddled peach salad


  • 1 lime, zested and juiced

  • 2 peaches (300g), quartered

  • 1 small avocado, stoned and sliced

  • 2 tbsp finely chopped Mint, plus a few whole leaves to serve

  • 1 large Little Gem lettuce (165g), roughly chopped

  • 75g quinoa

  • 1 tbsp rapeseed oil

  • 160g fine beans, trimmed and halved

  • 2 tbsp basil, chopped

  • 1 small red onion, very finely chopped

  • ½ x 60g pack rocket


Step 1
Combine the oil, Mint, and basil with the lime zest and juice, then place half of the mixture in the bowl with the peaches and keep it aside.

Step 2
Cook the quinoa as directed on the package once step 1 is completed.

Step 3
Cook the beans until they are barely tender or for 3-4 minutes.

Step 4
Griddle the peaches for one minute on each side while you wait. Use a sizable nonstick frying pan with a small amount of oil if you don’t have a griddle pan.

Step 5
Divide the quinoa across small bowls after draining and combine the warm beans and onion with the remaining mint mixture before piling it all atop the quinoa.

Step 6
Add the peaches and avocado on top, then sprinkle the mint leaves. Serve the dish before it gets cold.
