Mexican Rice

Ingredients - 

 

  1. Long grain rice  / Basmati Rice - 1 cup

  2. Mixed vegetables - finely chopped beans , capsicum , carrots and corns - 1 and ½ cup

  3. Tomato puree - 1 tomato

  4. Onion - 1 finely chopped 

  5. Tomato - 1 finely chopped 

  6. Rajma - boiled -  ½  cup

  7. Cumin seeds - 2 Tsp

  8. Coriander seeds - 1 Tsp

  9. Oregano - 1 Tsp

  10. Red chilli powder / paprika powder - 1 Tsp

  11. Vegetable oil - 1 TBSP

  12. Garlic - finely chopped - 3-4 cloves .

  13. Jalapenos or green chillies - chopped roughly - 2-3 

  14. Salt to taste

Method - 

 

  1. In a pan add cumin seeds and coriander seeds . Saute them on medium flame for 2-3 minutes or till the seeds start releasing aroma. Do not over saute or burn the masala . Add to a grinder pot . Add oregano and blend into a fine powder . Add red chilli powder and mix well . 

  2. In a pot add long grain rice , 2 cups water , salt to taste and cook till the rice gets nicely cooked . Drain the excess water and keep aside. 

  3. Heat a pan on medium flame. Add vegetable oil. Add onion and saute for 2-3 minutes. Till the onion turns a little soft. Add garlic and jalapenos. Saute for another 2-3 minutes.

  4. Add mixed veggies and salt to taste. Mix well, cover and cook for 4-5 minutes or till the vegetables get cooked.

  5. Add tomato puree, grinded masala , boiled rajma , boiled rice and Mix well. Make sure the rice grains do not break while mixing. 

  6. Add finely chopped tomato and give a final stir. Cover and cook for 3-4 minutes. Serve hot with Salsa or guacamole of your choice.
