Methamba / Sweet and spicy raw mango pickle

Ingredients - 

  1. Raw Mango / Kairi - ½  cup

  2. Vegetable oil - 1 TBSP

  3. Hing powder - ¼ Tsp

  4. Mustard seeds / mohri - 1 Tsp

  5. Methi seeds / Fenugreek seeds - 1 TBSP

  6. Turmeric powder / Haldi powder - 1 Tsp

  7. Red chili powder  - 1 Tsp

  8. Salt to taste

  9. Water  - ¼  cup

  10. Jaggery - ½  cup

Method - 

 

  1.  Heat a pan on medium heat and add oil.

  2. Once the oil is hot add mustard seeds. Once they splutter , add hing powder. Add methi seeds , turmeric powder , red chilli powder. Mix well.

  3. Add cut raw mango and salt to taste. MIx well. Add water . Cover and cook for 4-5 minutes , till the raw mango gets cooked.

  4. Add jaggery and mix well. Cook on low flame till the jaggery melts and mixes well.

  5. Store in an airtight jar and refrigerate.  Remains good for more about a month. Can be enjoyed as a side dish for paratha or just sabji and roti.
