Ingredients - 

 

For Matar - 

  1. White Vatana  - 1 cup - soaked overnight

  2. Onion finely chopped - 1

  3. Tomato - finely chopped - 1 

  4. Ginger - finely chopped  - 1Tsp

  5. Turmeric powder - 1 Tsp

  6. Red Chili powder - 1 Tsp

  7. Cumin powder / Jeera powder - 1 Tsp

  8. Amchur powder - 1 Tsp

  9. Tamarind-dates chutney - 1 TBSP

  10. Salt to taste.

  11. Cilantro - finely chopped 

  12. Water - 2 cup

 

For Kulche - 

 

  1. Rava / Suji - Fine  -  1.5 cups

  2. Water - warm -  1  cup

  3. Sugar - 1 Tsp

  4. Yeast -  1 + 1/2 Tsp

  5. Salt -   ½ Tsp

  6. Olive oil - 3 TSP

  7. Black sesame seeds or sabja seeds - 1 Tsp

  8. Kasuri Methi - 1 Tsp

Method for Matar - 

  1. Soak the vatana overnight . 

  2. In a pressure cooker , add soaked vatana , turmeric powder , and water .  Cook for 3 whistles . 

  3. Let the pressure cooker cool down completely.  Remove the cooked vatana in a bowl. Add onion , tomato , ginger ,  red chili powder , cumin powder , amchur powder , tamarind dates chutney , salt to taste and mix well. Garnish with finely chopped cilantro. 

 

Method for Kulche - 

 

  1.  In a bowl add 1  cup warm water ,  sugar and yeast. Mix well . Keep aside for 10 minutes . 

  1. Get the fine rava or suji in a blender jar and pulse for 3-4 times to get a fine texture. If you do not get fine rava , then you can get any rava and just pulse it in fine powder.

  2. Add all rava to the yeast mixture. Knead for at least 10 minutes.  Till you get a nice soft dough.

  3. Add 3 Tsp olive oil and again knead for 5 minutes. Cover and rest the dough for at least an hour.

  4. Dough raises almost double its size. Knead again . Divide the dough into lemon shape balls of equal size.

  5. Take a dough ball ,  roll it into oblong shape .  Lightly pat a few sabja seeds and kasuri methi on the top.

  6. Heat a tava on medium heat . Put the kulcha on tawa , add 1 TBSP water on the side of tava . Cover and cook on medium - low flame for 4-5 minutes. 

  7. Remove the lid , apply oil on kulcha , flip and apply oil . Cook for another 2-3 minutes. 

  8. Serve hot kulcha and warm or cold matar as per your choice.
