Lemon Rice

Ingredients- 

  1. Rice - Cooked - 1 cup

  2. Vegetable oil - 1 TBSP

  3. Mohiri - 1 Tsp

  4. Jeera - 1 Tsp

  5. Hing powder - ¼ Tsp

  6. Curry leaves - 5-6

  7. Green Chilies - chopped - 3-4

  8. Whole red chilies - 2-3

  9. Chana dal - 1 TBSP

  10. Urad Dal - 1 TBSP

  11. Pumpkin seeds - 1 TBSP

  12. Lemon juice  - 1 TBSP

  13. Water - 2-3 TBSP

  14. Turmeric powder - 1 Tsp

  15. Salt to taste

  16. Cilantro - finely chopped for Garnishing.

Method - 

  1. In a pan, heat oil on medium heat. Once hot , add mustard seeds , jeera , hing powder , Urad dal , chana dal , green chilies ,  red chilies , curry leaves and pumpkin seeds. Saute for a minute. Add turmeric powder and mix well.

  2. Add cooked rice and mix well. Add salt to taste , lemon juice and 1-2 TBSP water as needed. Cover and simmer on low heat for 3-4 minutes.

  3. Garnish with finely chopped cilantro and serve hot .
