Ingredients - 

1.  Soy Milk - 3 cups

2.  Sugar - ½   cup

3.  Cardamom powder - ½ Tsp

Method - 

 

1.  Heat a pan on medium flame. Add Soy milk and  bring it to a nice boil. Lower the flame and simmer till you get a layer of fat / cream . Now using a spoon or spatula collect it in a bowl. 

2. Within some time, it forms again and similarly sticks it to the sides. Continue doing the same till you reach ⅓ of its original quantity.

3. Keep stirring frequently to make sure milk does not stick to the bottom. Add sugar and cardamom powder and mix well.

4. Mix the collected cream back into rabdi mix . Give a quick mix . Serve hot with Puri or as a chilled dessert.
