Kobi Vadi / Spicy cabbage Fritters

Kobichi vadi or spicy cabbage fritters is a traditional Maharashtrian recipe just like kothimbir vadi or clinatro fritters.

These are made from chickpea flour , cabbage and a blend of spices. You can serve them as a side or snack . Eat thme just steamed or shallow fry or deep fry. A healthy and delicious option to eat cabbage.

Ingredients

 

Cabbage - freshly grated - 2 cup

Chickpea flour / besan - 1 cup

Rice flour - ¼ cup

Turmeric powder  - 1 TSP

Red chilli powder - 1 TSP

Coriander-cumin powder - 2 TSP

Salt to taste.

Vegetable oil - 1 TSP

Sesame seeds - 1 TSP - optional

Ajwain seeds - 1 seeds - optional

Method

  1. In a mixing bowl add freshly grated cabbage , turmeric powder , red chilli powder , coriander-cumin powder , salt to taste. Mix well. Cover the mixture keep aside for 10 minutes.

  2. Add rice flour and mix well.

  3. Add the besan and knead into a soft bowl , do not add any water, just add as much besan as it fits into mixture.

  4. Add oil and shape the dough to cylindrical shape greasing hand with oil.

  5. Steam the dough for 15-20 minutes.

  6. Cool the dough and cut into thick slices.

  7. Further deep fry or shallow fry the slices in hot oil.

  8. Finally serve kobi vadi with a hot chai .
