Khara Pongal

Ingredients - 

for pressure cooking:

 

  1. Rice (rinsed) - ½ cup 

  2. Moong dal (rinsed) - ½ cup 

  3. Vegetable oil - 1 Tsp

  4. Water - 4 cups

for tempering:

  1. Vegetable oil - 1 TBSP

  2. Pepper cons - 1 Tsp 

  3. Cumin / jeera - 1 Tsp

  4. Ginger (finely chopped) - 1 inch

  5. Hing / asafoetida - ¼ Tsp 

  6. Curry leaves - 8-10 

  7. Dry Red chilli - 2-3 

  8. Salt to taste .

Method - 

 

  1. In a pressure cooker add vegetable oil. Once hot add rice and dal. Saute till they turn aromatic. Add water and pressure cook for 3-4 whistles. 

  2. For tempering - In a pan add vegetable oil. Once hot add pepper cons , finely chopped ginger , jeera , hing , curry leaves and mix well. Break the red chilies into half and add to tempering. 

  3. Add the hot tempering to cooked rice and dal. Add salt to taste and mix well. If required add water to adjust consistency ,  mix well and simmer on low heat for 2-3 minutes.
