Kesar Bhat / Saffron rice

Ingredients

 

Basmati rice or ambemohar rice -  2 cups

Water - 3 cups

Sugar - 2 and ½ cups

cloves -  4 pieces

cardamom powder -  1 Tsp

vegetable oil - 1 TBSP

raisins - 1TBSP

Kesar / Saffron

Non dairy milk - 1 TBSP

salt - 1/4 tsp

Gas Stove Method -

 

1. In a saucepan add oil. Once warm add the cloves. Saute for a minute

2.  Add Rice and saute nicely.

3. Add warm water and salt. mix well. Cover with a lid and let the rice completely cook. Takes around 15-20 minutes.

4. Add sugar , cardamom powder , raisins .

5. Mix kesar with any non dairy warm milk and add to rice.

6. Mix well. Be careful not to break the rice grains. Cover and cook for another 10-15 minutes.

Instapot Method -

  1. Switch on the instapot on saute mode.

  2. Once hot add oil and cloves. Saute for a minute

  3. Add Rice and saute nicely.

  4. Add warm water and salt. mix well. Cover with a lid on sealing. Turn to manual or rice mode and cook for 6 minutes. Let pressure release naturally.

  5. Add sugar , cardamom powder , raisins , Kesar.

  6. Mix kesar with any non dairy warm milk and add to rice.

  7. 5. Mix well. Be careful not to break the rice grains. Cover with a glass lid and cook for another 10-15 minutes.
