Goda Masala

Goda Masala is a typical maharashtrian spice mixture. Maharashtra region has quite a few spice mixtures that are specific to the region it is made in. Every region , family has their unique recipes , spices that are used to make these masalas. This goda masala recipe from one of my family's old recipe books.  It is an easy recipe that can be used to flavor your everyday items like usal , amti or special dishes like masale bhat.

Ingredients - 

  1. Coriander seeds  - 1 Cup

  2. Dried coconut -  ½ cup

  3. Sesame seeds - optional - ½ cup

  4. Cumin seeds - ½ cup

  5. Black Cumin seeds / Shah jeera - ½ cup

  6. Poppy seeds - ½ cup

  7. Black Cardamom - 4 pieces

  8. Cinnamon stickers - 4 pieces

  9. Cloves - 1 Tsp

  10. Black pepper - 1 Tsp

  11. Star Anise - 1

  12. Mace / Javitri - 1 Tsp

Method -

 

  1. First dry roast coriander seeds on low flame till they start releasing aroma. 

  2. Then one by one dry roast dried coconut and sesame seeds .

  3. Dry roast rest of the spices on low flame as well.

  4. Grind coriander seeds into fine powder and sieve them . Mix the coarse particles with the rest of the spices.

  5. Grind the rest of the spices as well into fine powder. Mix the coriander seeds powder and other spices . Store in an airtight container. This masala stays good for 5-6 months . You can use it to flavor your daily curries or special dishes like Masale bhat.
